Puffed Rice Mixture | Masala Murmura Recipe

Everyone loves street food with some spice, little crunchiness, sweet and tangy stuff. But that’s not healthy at all and still we love it. Some of us can’t stop thinking about some chaat or bhel puri while dieting, don’t we? Well, how about I tell you that you can have them all while dieting. Yes, you read that right.
There’s always one ingredient common in almost all kinds of chaat’s and that is Murmura. Murmura or Puffed Rice is easily available in the market. It’s basically made from rice kernels that are heated at high pressure in the presence of steam. That’s how they are so soft and crunchy at the same time.
It’s my favourite recipe and I always have a jar full of Puffed Rice Mixture at my home. It’s easy to make and tastes much better than the packet mixture you get in the stores. Now, I’m going to share Masala Murmura Recipe which is a Quick Healthy Snack.
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes
Serves:  8 cups
For Puffed Rice Mixture | Masala Murmura Recipe you’ll need:
5-6 tbsp mustard oil
1 packet murmure
1 cup chana dal
1 cup sev
1 tsp mustard seeds/ rai
Salt to taste
½ tsp chilli powder
1 tsp garam masala
2 tbsp powdered sugar
½ tsp turmeric
2 tsp aam churna
8-10 curry leaves
How to:
1. Heat 5-6 mustard oil in a large kadai.
2. Add 1 tsp Mustard seeds/ Rai when the oil is hot enough.
3. Add curry leaves when you hear sizzling sound of mustard seeds.
4. Let it heat for a minute and add salt, chilli powder, garam masala, turmeric, aam churna to it.
5. Now, add full packet of murmure, chana daal and sev. Mix them well.
6. Turn the flame off add 2 tbsp sugar, double the quantity of aam churna to it.
7. Mix everything really well and don’t let the sugar stick to the kadai.
8. Let it cool and store it in an airtight container.
Tips:
1. Instead of sugar you can use shakkar (brown sugar). Or skip that part. It’s totally up to you.
2. If the murmure are soggy dry roast them separately before adding it to the pan.
3. The murmura and the sev should not have any moist in it. Don’t open the packet uness you’re not going to use it immediately. They will become soggy. Store them in an airtight container to avoid moisture.
4. Instead of sev you can also us aalu bhujia.
5. Keep stirring while you are adding sugar, as it can stick to the pan if you leave it for too long.
